You Can't Miss This Chinese Dish Especially in Winter...

Hello everyone! Welcome back! The weather in our city is getting colder and colder, so today I'd like to introduce a Chinese soup with you. In China, we usually cook it in winter to keep us warm--lotus root & pork soup~


 

Why we like it?


Chinese people like to cook and eat soup in home. It is said that drinking a bowl of soup before meals can help digestion well. Especially in the wintertime, a hot bowl of soup not only satisfies our taste buds, but also warms up our hearts.

People in China consider this dish a medicinal one (药膳, yao shan), because traditional Chinese medicine considers it to have a great amount of health benefits. It contains a good amount of protein, vitamins, dietary fiber, and carbs. Lotus root signifies abundance and prosperity to the Chinese so this is a popular soup for many who celebrate Chinese New Year.

This soup can be seen as one of the most common soup in China, almost every Chinese restaurant serves it. I can well remember that I order it in a Chinese restaurant in Seattle. That was the best Lotus root and pork soup I ate in America!

 


500g pork ribs

2 large louts root, peeled and cut into large chunks

1 thumb ginger, smashed

1/2 cup peanuts

4L water

2 tsp. salts

Spring onion or coriander for garnishing



 


1. Clean the ribs under running water and then soak the ribs in clean water for 30 minutes. Change the water 2 times. Drain and set aside.

2. Rinse peanuts under running water.   Wash the lotus root and peel off the skin and cut into large chunks. Add peanuts, ginger and lotus root chunks into the stew pot. Add water in and cook a soup or bones procedure (around 40 minutes)

3. When you are ready to serve  add salt to taste and cover the lid and stand for another 10 minutes. Serve with coriander or scallion.
